Palatine Valley Dairy had to find a niche that would distinguish their cheese from the generic types of cheddar already out there, so they started flavoring the cheese.
Over a 5 year period, the cooperative expanded its product line to include the 25 flavors of cheddar to 7 flavors of fresh curd that is still made today.
Palatine distinguishes itself today by being the only brand in the Northeast that can boast of its large variety of flavors of cheddar cheese and cheese curd.
