Salad Greens and MixesMixed_Field_Greens

About and Nutrition: Every good farmer has his own special salad green mix recipe. For example, the Markristo Mix has a variety of baby lettuces and various greens including oak leave lettuce, mustard greens, frisee, baby chard, mizuna. The important thing to think about is that these mixes tend to be more nutritious than your standard salad made of green leaf romaine.

To illustrate:

  • Green leaf romaine has 10 % DV of vitamin A, 2 % DV of vitamin C and is considered a very good source of 8 different vitamins and minerals.
  • Swiss chard (baby variety is often included in mixes) has 44% DV vitamin A, 18% vitamin C and is considered a very good source of 13 different vitamins and minerals.
  • Endive has 222% DV vitamin A, 56% DV vitamin C, 27% DV calcium, 24% DV iron has is a very good source of 13 different vitamins and minerals. (source nutritiondata.com)

There are dozens of varieties of greens. One of the best sources we found for information about a large variety of greens (with photos)  all in one convenient place is the worldwidegourmet.com.

Storage: Refrigerate all greens in the crisper, the coldest part of the refrigerator. You want to keep them moist but not wet. The best solution is a damp cotton or mesh bag or paper towels. Plastic bags are better than nothing but after awhile the product will start to go bad, without a bag it dries up.  Here is an absolutely fantastic demonstration of how to store salad lettuces and cooking greens
