About: Bok choy is a member of the brassica family and is also known as Chinese cabbage,  The name is sometimes spelled as pak choi, bok choi, and pak choy.  Bok Choy is the chinensis variety of Chinese cabbage and has smooth, dark green leaf blades.  It does not form a head as does the Pekinensis variety (also known as Napa Cabbage).

Storage: Place unwashed bok choy in loosely closed plastic bag and refrigerate.  Bok Choy is more perishable than cabbage.

Tips:  The entire head can be eaten.  Cut the stalks along the diagonal and cut across the leaves.  Bok choy is an amenable vegetable it can eaten raw, roasted, boiled, steamed, stir-fried, microwave and deep fried. Bok choy is ofen prepared with garlic or ginger.  Use it as a substitute for cabbage. Shredded baby bok choy is a nice addition to salads. You can freeze bok choy.
